Koldskål og Kammerjunker

Ingen dansk sommer uden koldskål og Kammerjunker! Men hvad så når man bor på den anden side af kloden? Fortvivl ikke! Jeg bringer her 2 lette opskrifter på gammeldags koldskål og hjemmebagte kammerjunker. Begge opskrifter er oversat til engelsk.

Koldskål

Koldskål findes i mange forskellige varianter, men min favorit er den gammeldags koldskål lavet med kærnemælk og æg.

Ingredients:

1 liter buttermilk
50-60 g white sugar (brown sugar is harder to dissolve)
1/2 organic lemon
1 good-quality vanilla bean
1-2 egg yolks, depending on size (2 small or 1 large)

Instructions:

Vanilla:

  1. Start by pouring a teaspoon of sugar onto a cutting board.
  2. Split the vanilla bean and scrape the seeds into the sugar.
  3. Press it with the flat side of a knife and mix it around a bit to prevent the vanilla from clumping too much.

Kold Skål:

  1. Separate the egg yolk(s) from the egg whites and place them in a bowl along with the sugar.
  2. Whisk the egg yolk(s) and sugar until you have a fluffy “egg mixture.”
  3. Add buttermilk, vanilla sugar, lemon juice, and lemon zest to the bowl, and mix or whisk well.
  4. Taste and adjust with more lemon juice or sugar according to your preference.

Kammerjunker

Ingredients:

100 g all-purpose flour
25 g whole wheat flour
1 tsp baking powder
50 g sugar
1 pinch of salt
½ organic lemon, grated zest
1 tsp vanilla sugar
50 g butter
1 egg

Instructions:

  1. In a bowl, mix together all-purpose flour, whole wheat flour, baking powder, sugar, salt, grated lemon zest, and vanilla sugar.
  2. Crumble the butter into the flour mixture until it becomes fine and uniform.
  3. Add the egg to the mixture and quickly knead the dough together.
  4. Cut the dough into pieces of about 6 g each. Roll the pieces into balls and place them on a baking sheet lined with parchment paper.
  5. Gently press the kammerjunker in the middle to flatten them slightly.
  6. Bake them in a preheated oven at 160 degrees Celsius (320 degrees Fahrenheit) in a convection setting for 15-18 minutes, or until they are lightly golden around the edges.
  7. Allow them to cool on a wire rack.

Har du ikke mod på selv at bage Kammerjunker kan du f.eks bruge Shortbread Biscuits. Den er lidt blødere og lidt sødere.

Serveringsforslag

Koldskålen serveres iskold med en håndfuld kammerjunker oveni.

Er det jordbær sæson smager det også godt med en håndfuld ¼ jordbær fordeæt udover koldskålen.
